Strawberry Bread Cake

Ingredients
  • ½ cup vegetable oil 
  • 1 egg 
  • 1 tsp lemon zest 
  • ¾ cup milk 
  • ½ cup Nate’s 100% Pure Honey, plus extra for drizzle
  • 2 tsp vanilla extract 
  • 2 cups flour, plus extra for coating strawberries
  • ⅓ tsp salt 
  • 2 tsp baking powder 
  • ⅓ tsp cinnamon 
  • 2 cups chopped strawberries

Directions

In a large mixing bowl, whisk together vegetable oil, egg, lemon zest, milk, honey and vanilla extract.  Add flour, salt, baking powder and cinnamon, and combine.

Toss the chopped strawberries in a little extra flour to prevent them from sinking to the bottom of the cake. Add the strawberries to the cake batter. Do not overmix the batter once combined.  

Pour the batter into a 9 x 5-inch loaf pan that has been buttered and floured. Bake in an oven at 350°F for 1 hour or until an inserted toothpick comes out clean.  

Once the cake has cooled and been removed from the pan add an extra drizzle of Nate’s honey.
