Pink Blender Soup
Blend up a refreshing real food soup. Bright red beets give splendid color to this dish, turning it beautiful and pink. A quick and simple dish, perfect as an easy lunch, side dish or light dinner.

Ingredients
- ¼ sweet onion, diced
- 2 cloves garlic
- 2 Tbsp Nate’s 100% Pure Honey
- 4 – 6 steamed beets
- 12 oz frozen cauliflower, thawed
- 1 – 1½ cups coconut milk or kefir (to desired consistency)
- 1 hardboiled egg, halved
- ¼ cup scallions, diced
- 1 tsp fresh dill (or ¼ tsp dried dill)
Directions
Place onion, garlic, honey, beets, cauliflower, yogurt and broth in a high-speed blender and puree until smooth. Salt and pepper to taste. Serve cold, or heat in a pot over medium heat until steaming. To serve, pour soup into 2 bowls. Place a hard-boiled egg in the center of each bowl. Sprinkle with scallions and dill. Serve and enjoy!
