Paleo Pancakes
Forget the pancake mix! These naturally sweet, whole-food pancakes are grain- and gluten-free. You can enjoy an entire stack of flapjacks for breakfast. What could be sweeter than that?

Ingredients
Pancakes
- 2 eggs
- 2 plantains
- 2 Tbsp Nate’s Organic 100% Pure Honey
- 1 steamed beet
- 1 tsp apple cider vinegar
- Pinch of salt
Fruit
- ¼ cup raspberries
- ¼ cup strawberries
- 2 Tbsp pomegranate arils (optional)
- 3 Tbsp Nate’s Organic 100% Pure Honey
Directions
In a blender, puree all pancake ingredients. Cook in skillet heated to medium heat, using coconut oil to keep the pan well greased.
Mix together fruit, tossing in honey until well coated. Serve pancakes topped with honeyed fruit. Enjoy!
