Peach Blueberry Baked Oatmeal

Whether you are feeding a crowd or making breakfast for one, this recipe is sure to warm the soul and make your morning. Ingredients
  • 2½ cups of milk (dairy, almond, oat, etc)
  • ¾ cup Nate’s 100% Pure Honey
  • 2 tsp vanilla extract
  • 2 eggs
  • 3 Tbsp melted butter (or coconut oil for dairy free)
  • 3 cups old fashioned oats
  • ¼ cup chia seeds, optional
  • ½ tsp salt
  • 2 tsp cinnamon
  • ¼ tsp nutmeg
  • 1½ tsp baking powder
  • 1½ cups blueberries
  • 1½ cups diced peaches (about 1 peach)

Directions

Preheat the oven to 350°F. Grease a 9 x 13-inch pan with cooking spray or butter and set aside.

In a large mixing bowl, whisk together the milk, honey, vanilla extract, eggs and melted butter. Stir in the oats, chia seeds (if using), salt, cinnamon, nutmeg and baking powder. Gently fold in the blueberries and peaches, then pour into your prepared pan.

Bake for 20-25 minutes, or until set. Let it cool, then serve with an extra drizzle of honey or a dollop of yogurt.
