Baked Apple Fritters with Honey Sauce

Ingredients
- 1 cup all-purpose flour
- 1 cup cake flour
- 2 tsp baking powder
- 1 tsp kosher salt
- 1½ cup Nate’s Organic 100% Pure Honey, divided
- 2 large eggs
- ¾ cup cream
- 2 Tbsp melted butter
- 2 apples, such as Gala or Fuji, peeled, cored and cubed
- ½ cup water
Directions
Heat oven to 350°F. In an electric mixer, add both flours, baking powder and salt, and mix to combine. Add ½ cup honey, eggs, cream and melted butter, and mix on medium-high for 2 minutes. Stir in cubed apples until well incorporated.
Scoop into a greased mini bundt pan, donut pan or muffin tin and bake for 20 minutes. Place a cookie rack on top of the pan and flip the fritters. Place cookie rack onto a baking sheet and bake for another 5 minutes.
In a separate bowl, combine 1 cup of honey with ½ cup of water and stir to combine. Dip each fritter in the honey and allow to cool on the cookie rack before serving.
