Bacon Wrapped Honey & Goat Cheese Stuffed Dates

- 1 oz/140g goat cheese
- 1 tsp fresh thyme, chopped, plus more for garnish
- 1 tsp fresh rosemary, chopped
- 2 Tbsp Nate’s Organic Honey, plus more for drizzling
- ¼ tsp salt
- ¼ tsp black pepper
- 16 Medjool dates, plump (not too dry) pitted
- 8 slices of thin-cut bacon, cut in half
Directions
Preheat oven to 400°F and line a baking sheet with parchment paper.
In a bowl add goat cheese, chopped thyme and rosemary, honey, salt and pepper. Mix to combine.
To the pitted dates, add a small spoonful of the goat cheese mixture and press the sides gently to seal it in (they’ll kind of look like hotdogs!). Wrap each date with half of a bacon slice and place on the prepared baking sheet. Drizzle more honey onto the dates.
Place in center of oven and bake for 20-25 minutes, or until the bacon is crispy. Remove from oven and place on paper towel lined plate for 5 minutes before serving. Drizzle with more honey and a sprinkle of fresh thyme. Serve warm or at room temperature. Enjoy!
