Hibiscus Ginger Honey Spritzer

- 4 cups water
- 4 heaping Tbsp dried hibiscus flowers or 4 bags of hibiscus tea
- Thumb-sized knob of fresh ginger, peeled and sliced into ¼-inch slices
- Juice from 1 lemon
- ¼ cup Nate’s 100% Pure Honey
- Sparkling mineral water or club soda to taste
Directions
Bring water to a boil, then allow to cool slightly for 2 minutes. In a heat-safe pitcher, steep the hibiscus flowers and slices of fresh ginger in the hot water for 5-10 minutes. Strain and allow to cool completely.
Meanwhile, juice the lemon and stir in the honey until dissolved. Add the lemon juice to the tea and chill until cold, at least half an hour. Fill a glass with ice, pour the hibiscus honey tea three fourths of the way up and top with sparkling mineral water or club soda. Garnish with a lemon slice.
