Apple Honey Frittata

Frittata
- 2 Tbsp unsalted butter
- 3 large eggs, room temperature
- ½ cup low fat milk
- ¼ cup heavy cream
- 1 Tbsp Nate’s 100% Pure Honey
- 1 Tbsp cornstarch
- 1 tsp vanilla extract
- Pinch of salt
Apple Topping
- 1 Tbsp unsalted butter
- 2 large apples, peeled and sliced into ½-inch thick pieces
- ½ cup Nate’s 100% Pure Honey
- 2 tsp fresh lemon juice
- ½ tsp cinnamon (optional)
- 1 tsp cornstarch
- 1 tsp water
Directions
Frittata
Heat oven to 400°F. Place the butter in a small cast iron skillet and put in the oven for 2 minutes to melt the butter and heat the pan.
Meanwhile, whisk the eggs, milk, cream, honey, cornstarch, vanilla extract and salt until well combined. Remove the hot skillet from the oven and immediately pour the egg mixture inside. Bake for 10 minutes.
Apple Topping
While the frittata bakes, heat the butter in a sauce pan. Add the apples, honey, lemon juice and cinnamon (if using) and sauté until apples soften, a few minutes. In a separate bowl, whisk the cornstarch with the water, then add to the apples and stir until combined and the sauce thickens. Pour over the baked frittata and serve immediately.
