Yield: 6 Servings
Prep Time: 8 Hours
Total Time: 8 Hours 30 Minutes
- 1 Tbsp baking powder
- 1 tsp smoked paprika
- 1 tsp salt
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp freshly ground black pepper
- ¼ tsp dried thyme
- ¼ tsp dried oregano
- 3 lb chicken wings, mix of flats and drumettes
- ⅓ cup Nate’s Hot Honey
Directions
Mix the baking powder, smoked paprika, salt, garlic powder, onion powder and black pepper in a small bowl. Rub the dried thyme and oregano between your palms to crush, add to the bowl, and mix.
Arrange the chicken wings in a single layer on a large rimmed baking tray. Sprinkle the chicken with half the seasoning mix, flip, and sprinkle with the other half. Place the tray in the refrigerator uncovered for 8-24 hours.
Air Fryer Method: Preheat air fryer to 400°F. Spray the basket with cooking spray and arrange the wings in a single layer. (This will require cooking in multiple batches.) Cook for 8 minutes, flip, and cook for another 8 minutes. Brush with the hot honey, and continue cooking for 4 more minutes. Repeat with remaining wings.
Grilling Method: Preheat grill to a medium heat, around 350°F. Spray grates with cooking spray. Cook wings on prepared grates for 20 minutes, flipping once or twice. Brush with hot honey and cook for 1-2 more minutes to set. Remove from grill and let rest for 10 minutes before serving.
