Hot Chocolate Cookies
Yield: 16-20 Cookies
Prep Time: 5 Minutes
Total Time: 20 Minutes
- 3 cups flour
- ½ cup cocoa powder
- 1 tsp salt
- 2 tsp baking powder
- 1 cup butter, room temperature
- 1 cup Nate’s 100% Pure Honey
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup semi-sweet chocolate chips
- 1 cup mini marshmallows
Directions
In a mixing bowl, add the flour, cocoa powder, salt and baking powder and stir to combine. Add the softened butter, honey, eggs and vanilla extract and mix on medium-high until well combined, stopping occasionally to scrape down the sides and bottom of the mixing bowl. Fold in the chocolate chips and mini marshmallows and stir until incorporated.
Use a 1-inch cookie scoop to scoop out the cookies onto a parchment-lined baking sheet. Press down until you have a ½-inch thick disk and refrigerate for 30 minutes.
Heat oven to 350°F. Arrange cookies 2 inches apart and bake for 10-12 minutes or until marshmallows begin to melt. Bake in batches or use 2 baking trays, as needed. Cool slightly before transferring to a cookie rack to cool completely.
